Kombu is a seaweed, which is rich in minerals and umami flavor.
It's known to be rich in iodine, calcium, potassium, magnesium, iron, sodium, chromium, protein mannitol, phosphorus, alginate, carotene, phosphorus, phytohormones and vitamins A, C, D, E, K and the B complex vitamins.
We especially love it (and you will too) because it greatly enhances beans' digestibility and prevents flatulence when used while cooking beans.
